Instructions:

1. Prepare the Prime Rib

  • Remove the prime rib roast from the refrigerator and let it sit at room temperature for about 1 hour to come to room temperature.
  • Preheat your oven to 450°F (230°C).

2. Make the Herb Rub

  • In a small bowl, combine the minced garlic, olive oil, chopped rosemary, chopped thyme, kosher salt, and black pepper. Mix well to form a paste.

3. Season the Prime Rib

  • Pat the prime rib roast dry with paper towels.
  • Rub the herb mixture all over the surface of the prime rib, ensuring it is evenly coated on all sides.

4. Roast the Prime Rib

  • Place the seasoned prime rib roast, bone-side down, on a rack set inside a roasting pan.
  • Roast in the preheated oven for 15 minutes to sear the outside of the roast.

5. Reduce the Oven Temperature

  • After 15 minutes, reduce the oven temperature to 325°F (160°C).
