1. Cook the Spaghetti

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook according to package instructions until al dente.
  3. Drain the spaghetti and set it aside, reserving ½ cup of pasta water.

2. Prepare the Sauce

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until softened and translucent, about 3–4 minutes.
  3. Stir in the garlic and cook until fragrant, about 1 minute.
  4. Add the Vienna sausages and cook for 2–3 minutes, allowing them to brown slightly.
  5. Pour in the crushed tomatoes and tomato paste. Mix well.
  6. Season with sugar, oregano, basil, chili flakes (if using), salt, and pepper.
  7. Simmer the sauce for 10–12 minutes, stirring occasionally. If it’s too thick, add a bit of the reserved pasta water to loosen it.

3. Combine and Serve

  1. Add the cooked spaghetti to the skillet with the sauce. Toss well to coat the noodles evenly.
  2. Adjust seasoning to taste, if needed.
  3. Plate the spaghetti and garnish with fresh parsley and a generous sprinkle of grated Parmesan cheese.
