1. Cook the Spaghetti
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook according to package instructions until al dente.
- Drain the spaghetti and set it aside, reserving ½ cup of pasta water.
2. Prepare the Sauce
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until softened and translucent, about 3–4 minutes.
- Stir in the garlic and cook until fragrant, about 1 minute.
- Add the Vienna sausages and cook for 2–3 minutes, allowing them to brown slightly.
- Pour in the crushed tomatoes and tomato paste. Mix well.
- Season with sugar, oregano, basil, chili flakes (if using), salt, and pepper.
- Simmer the sauce for 10–12 minutes, stirring occasionally. If it’s too thick, add a bit of the reserved pasta water to loosen it.
3. Combine and Serve
- Add the cooked spaghetti to the skillet with the sauce. Toss well to coat the noodles evenly.
- Adjust seasoning to taste, if needed.
- Plate the spaghetti and garnish with fresh parsley and a generous sprinkle of grated Parmesan cheese.
